These are the famous "magic muffins" whose recipe has apparently been on the Malt-O-Meal hot cereal box for years. They are so easy to make and are really tasty. They are pretty similar in texture to cornbread muffins, though perhaps a bit moister and sweeter. The recipe is really similar to that for cornbread too.
You can make these with plain cereal, or with the flavored (chocolate or maple/brown sugar) varieties. There is actually a slightly different recipe on the side of the maple/brown sugar box (I am guessing to account for the different amounts of sugar?), but I haven't tried that one yet. You can add spices or fruit or a different kind of milk or oil according to your liking. You can even pour the batter into a square or circular cake pan and bake it that way instead of in muffin form, though you will have to let it bake for several minutes longer than you would the muffins.
Malt-O-Meal muffins (from the Malt-O-Meal company)
1 1/4 cup flour (I use half whole wheat and half unbleached)
3/4 cup cereal
1/2 cup sugar
3/4 cup milk
1/4 cup oil (canola oil, melted butter, or melted coconut oil)
1 egg, beaten
1 TBS baking powder (aluminum-free, if you can find it)
1/2 tsp salt
Preheat oven to 400F and grease a muffin tin or cake pan. Combine all dry ingredients in medium mixing bowl, then add all wet ingredients and stir until combined. Pour into muffin tin or cake pan and bake for 18-20 minutes or until a fork poked in a center muffin or near the center of the cake pan comes out clean. Enjoy!
God bless,
Mrs. Bear
