Get some extra iron in your diet the fun way...with ginger molasses cookies! :-) I found this recipe in the Good Housekeeping Step-By-Step Cookbook, and made only small variations.
Ginger Molasses Cookies
1 cup packed brown sugar (I used dark brown sugar)
2/3 cup unsalted butter or refined coconut oil
1/2 cup blackstrap molasses
1/4 cup milk
2 tsp baking powder (aluminum-free, if you can find it)
1.5 tsp ground ginger
1 tsp ground cinnamon
3/4 tsp baking soda
1/2 tsp salt
1/4 tsp ground cloves
1 large egg, beaten
1.5 cups whole wheat flour
2 cups white (unbleached) flour
1/4 cup granulated white sugar
Preheat oven to 350F and line two cookie sheets with foil. In a very large bowl, mix together the first 11 ingredients (from brown sugar to beaten egg). Stir in the flour, about 1/4 or 1/3 at a time. Dough will be very thick; you can mix/knead in the last bit of flour with your hands if you prefer. (If you have an electric mixer, mix the first 11 ingredients and 2 cups of the flour with the mixer until blended, then stir in the rest of the flour with a mixing spoon.)
Pour granulated sugar into a small dish. With your hands, roll cookie dough into small (1.5") balls, then roll each one in granulated sugar before placing on cookie sheets about 2 inches apart. (You will probably need to cook these in two batches). Bake for 7-10 minutes, then let cool and store in sealed container. These are so pretty, as they flatten a bit when they are baked and have cracks on the top, and the sugar makes them sparkle. Enjoy!
God bless,
Mrs. Bear

Those sound really good. Unfortuantely, my husband doesn't like anything with molasses. Molasses are my favorite cookies, but I never make them because I don't want to have to eat the whole batch.
You could freeze some just for you! I haven't tried freezing these, but the way I froze my oatmeal cookies was to take two of them, place them flat sides together, wrap in plastic wrap, then put all the cookie pairs in a freezer bag in the freezer. :-)
Mmm, molasses cookies! Maybe when you take the frozen pairs out of the freezer, say on a hot July day, you could spoon some ice cream between them...mmm, molasses-ice-cream-sandwich! :)
Ooohhh, awesome! :-)
